So today is DAY 24 of my 24-day Advocare Challenge! I’ll be doing a post within the next week or so recapping my whole experience, but wanted to go ahead and share this recipe with ya’ll for guacamole deviled eggs. One of my favorite parts about this challenge was having to get creative in social gatherings involving food. I went to a girls dinner on day 12 of my challenge where we were all supposed to bring a different food item. These guacamole deviled eggs were super simple to make, SO delicious, and challenge-friendly! Hope you enjoy them as much as we did!
Guacamole Deviled Eggs

Ingredients:
- 6 large eggs, hard boiled
- 1 medium haas avocado (about 5 oz)
- 2-3 tsp fresh lime juice
- 1 tsp red onion, minced*
- 1 tbsp minced jalapeno*
- 1 tbsp fresh cilantro, chopped
- kosher salt and fresh ground pepper, to taste
- 1 tbsp diced tomato*
- pinch chile powder (for garnish)
*instead of these 3 ingredients, I used store-bought pico de gallo because I was in a time crunch, and it worked great!
Directions:
Peel the cooled hard boiled eggs.
Cut the eggs in half horizontally, and set the yolks aside.
In a bowl, mash the avocado and 2 whole egg yolks; discard the rest. Mix in lime juice, red onion, jalapeño, cilantro, salt and pepper and adjust to taste. Gently fold in tomato.
Scoop heaping spoonfuls of the guacamole into the 12 halved eggs. Sprinkle with a little chile powder for color and arrange on a platter.
