my 3 go-to healthy dinners

Another Wellness Wednesday comin atcha! For today’s post I thought it might be helpful to share with y’all 3 of our go-to healthy dinners around here! Whenever we don’t feel like getting creative or searching for pinterest for a new recipe…these are 3 dinners Michael and I go back to time and time again because they are yummy, easy, and healthy! (And typically make for great leftovers too!).

healthy dinner #1: thai cashew chicken stir fry

I’ve shared this recipe on the blog before (in this post) which shows…we really have been making this for years haha. The recipe is from Averie Cooks and you can find the full recipe on her website here! This recipe isn’t necessarily crazy simple because there is a decent amount of chopping involved, but it is SO yummy and makes for great leftovers the next night or two as well! I love that it incorporates so many different food groups in one meal – from protein to veggies, and then we typically serve ours over quinoa. It’s delicious and I’ve gotten my mom and sisters hooked on it too!

healthy dinner #2: chicken + bacon ranch bowls

The above photo and the recipe is from one of my favorites – the defined dish! This is a newer recipe for us that we just started making a few months ago but have already repeated it several times! The Tessemae’s ranch is actually whole30 compliant which means this entire meal is whole30 friendly! It’s literally chicken, bacon, sweet potatoes, broccoli, and the creamy ranch all in one bowl and it is DELICIOUS! Super easy to throw together with amazing flavor!

healthy dinner #3: jalapeno turkey burgers

The photo above and this recipe is from the organic kitchen and one we have made for YEARS now! We make ours with sweet potato fries and ALWAYS make homemade guacamole to put on top! This meal has a ton of protein and a ton of flavor! I’m pretty sensitive to spicy foods and I don’t think the spice in these is too much at all! Michael and I both love them and they are SO easy to make!
