Happy Friday eve! Easter weekend starts tomorrow and I know this holiday is going to look quite different for all of us than it typically does. We are still going to try and make it a special weekend and celebrate our risen Lord, at home with our little family! So today I wanted to share a few yummy recipes y’all could cook over the weekend! All of these are also whole30 approved, so if you’re joining me on the #whole30withLKS challenge – these are for you!
I made this breakfast casserole recipe earlier this week and all 3 of us (Shiloh included) LOVED it! It was pretty simple to make, tastes delicious, and makes a TON of leftovers (especially if you’re only a family of 2 or 3 like us).
Here are a few more recipes that look so yummy for Easter weekend, and probably some ideas of what I’ll be cooking on Sunday!

Also! Yesterday marked ONE WEEK of whole30! To be honest the first week was pretty tough for us (Michael is doing it with me). I wanted to quit a few times haha but Michael kept saying “we are not quitting before we get to a week”. And now that I’ve made it a week, I feel really good and motivated to keep going! I already feel less bloated and sluggish and have noticed better ability to focus. And we’ve really enjoyed cooking lots of new recipes! Sharing my whole30 grocery list with you guys below! These are pretty much items I always stock up on, no matter what we are cooking that week!
I’ve been able to get a lot of our groceries delivered…but delivery windows are kind of hit and miss right now. So I’ve had to run to the grocery store once or twice (wore a mask, washed my hands, used proper precautions!), and my store was actually really stocked! I was so thankful, and hope that’s true for you guys as well!
If you’re joining me on this whole30 challenge – how was week 1 for you?! If you didn’t join me on April 1, you could still start now! I’ll continue to share lots of recipe ideas, weekly checkins, giveaways and more! A lot of people have told me I’m crazy for doing this during quarantine…but I really appreciate how it’s forced me to not turn to wine or dessert for comfort when I’m feeling stressed! I definitely miss those things but my body (and mind) are thanking me for fueling it with really good, nutritious food right now! It’s been tough, but so far…definitely worth it!
