I am SO happy October is finally here because that means it is officially crockpot / instant pot season! We got an instant pot a few years ago and it’s hands down one of my most-used / favorite kitchen gadgets I own. Literally in the fall I would say 75% of our dinners are made in the instant pot! We had a crockpot before the instant pot which I also loved…but now that we have the instant pot I almost never use the crockpot! Instant pot is so much easier + can do so much more.
ANYWAY! Today I wanted to share 5 instant pot recipes we’ve made over and over again! I’m sure there’s also a way to do any of these recipes in a crockpot as well, if you don’t have an instant pot!
5 fall instant pot recipes I’m loving
Jalapeno popper chicken chili
Recipe can be found here from skinnytaste! One of mine and Michael’s absolute faves. It tastes so delicious, but it’s also very healthy + nutritious! It’s whole30 approved but still has tons of flavor and is super filling. We always top ours with avocado, and when we’re not doing whole30…goat cheese on top is also delicious! We have legit made this recipe at least 30 times haha. It’s also a good one to make for a group because it makes a decent amount!
Italian pulled pork ragu
Another recipe I got from skinnytaste and LOVE! This is another whole30-friendly recipe that I love serving over spaghetti squash or zoodles. Or it’s also delicious over whole wheat spaghetti noodles as well! Super easy and tons of flavor!
Instant pot brisket tacos
I love this defined dish recipe for brisket tacos! Michael and I made these for Cinco de Mayo this past year and felt like we were eating at Mi Cocina (one of our fave tex mex spots in dallas) because the tacos were so delicious! This recipe was a little more involved than the other instant pot recipes I shared above but WORTH it and also made a lot of leftovers!
Chicken enchilada soup
Recipe can be found here! I like taco soup but feel like it never really fills me up for a whole meal. I think this chicken enchilada soup is similar to taco soup but it feels more filling to me, and also tastes SO GOOD! We love eating ours with some tortilla chips on the side and topping the soup with avocado! This soup is full of flavor and so easy to make!
White chicken chili
I found this recipe when were doing whole30 this spring and Michael and I both LOVED it. The chili has a little kick to it, without being too spicy, and it’s the perfect warm comfort type chili for fall but still with clean ingredients + good veggies and protein!
